In Canada, Maple Sugar Season takes place when cold winter nights are succeeded by days of thaw. As the sun warms the days, the maple sap begins to flow, and only then can the season truly come to life.
Our succulent maple syrup comes from maple groves in the Eastern Townships of Quebec, just across the border from Vermont and New Hampshire. When spring returns, maple trees reach for the sky to catch the sun’s first rays and take advantage of the warm light that will allow the production of maple sap. A liquid on which depends the noble nectar of spring so sought after by the finest mouths in the world: the purest maple syrup.À
Over the years, our family has worked actively in the production of maple syrup, constantly refining its techniques. We are dedicated to the traditions that helped make the Province of Quebec what it is today, and we strongly value our connection to its rich history. Our pride in our roots is every bit as strong as our pride in our craft. This is why our current equipment combines both tradition and modernity. To ensure our maple syrup production, we are dealing directly with the PPAQ ( Quebec maple producer association), which is managing The Strategic Reserve (The only maple syrup reserve in the world).
Maple syrup production is highly dependant on the weather.In years when Mother Nature is generous, it can result in pro-duction surpassing demand, and the industry struggles to deal with a surplus. And when weather conditions are unfavourable, producers can’t supply all the maple syrup that consumers want. This unpredictability is why Québec Maple Syrup Pro-ducers established its Strategic Reserve. When production ex-ceeds demand, surplus maple syrup is pasteurized, preserved
in food grade containers, and stored. Then, when it’s a poor harvest year, syrup in the reserve is made available to buyers. In this way, we are virtually never out of stock and the markets remain supplied.
The Strategic reserve is located in Laurierville in Quebec and covers an area of 267,000 square feet. The Laurieville’s site can store up to 55 million pounds of maple syrup. That’s 94,000 barrels, each containing 45 gallons (205 liters), amounting to half of the average annual harvest of Québec maple syrup. As of 2020, Québec was producing 73% of all maple syrup in
the world.

What does “pure maple syrup” mean?
A bottle of maple syrup that is labelled as “pure” means the syrup is free of any unnecessary ingredients or additives. In other words, it only contains one ingredient: maple syrup. You can rest assured that our product is absolutely 100% pure, as we work hand in hand with Mother Nature to offer you the most authentic maple syrup there is.
Is your maple syrup organic?
Absolutely! Our maple syrup is boiled with 100% sustainable wood fuel and is free of any harmful chemicals and additives. We do not boost the growth of our trees with any synthetic supplements either. That is why our maple syrup has been certified 100% organic by Ecocert Canada, which is the reference in terms of sustainable practices and certifications in Canada.
Is your maple syrup vegan?
Yes, our product is indeed vegan because pure maple syrup is solely plant based. Some producers use animal fat to reduce the amount of foam in their syrup, but we do not. Our product is also gluten free.
Is there any lead in your maple syrup?
Our maple syrup has not been in contact with any lead during the entire production process, including all the equipment’s used from the tree tapping to the warehousing of the syrup.
